讓一道番茄燉蝦滑,喚醒食欲,暖融深秋好時光。

A comforting dish of tomato braised shrimp paste will awaken your appetite and bring warmth to these beautiful autumn days.

絲瓜削皮、去瓤,切成條狀,

Peel and disembowel the luffa gourd, slicing it into thin strips.

將處理好的蝦仁拍扁,剁成蝦泥,

Flatten the prepared shrimp and chop it into a fine paste.

五花肉切成小丁,

Dice the pork belly into small cubes.

切制姜末加入其中去腥,

Add chopped ginger to the pork to eliminate any lingering fishy odor.

放入鹽、味精、雞精、雞汁調味,

Season the pork generously with salt, MSG, chicken powder, and chicken stock.

抓拌均勻,摔打上勁。

Mix the seasoned pork thoroughly and beat it to develop its texture.

用手將蝦泥團成圓子,放在盤中備用。

Use your hands to roll the shrimp paste into small, even balls and set them aside on a plate.

番茄切丁。

Dice the tomatoes into pieces.

鍋熱加入適量的油,

Heat oil in a pot over medium heat.

下入番茄丁,

Add the diced tomatoes and a small amount of tomato paste to the pot. 

加入少許番茄醬炒制片刻,

Saute the mixture for a few minutes until softened.

番茄炒至軟爛后加入高湯繼續熬煮,

Once the tomatoes have become soft and mushy, add some broth to the pot and continue simmering.

加入鹽、味精、雞精、雞汁調味,

Season the broth with salt, MSG, chicken powder, and chicken stock to your liking.

湯底熬制完成。

The tomato broth is now complete.

將熬好的番茄湯底倒入另一個鍋中,

Pour the simmered tomato broth into another pot.

下入蝦滑和絲瓜,

Add the prepared shrimp paste balls and luffa strips to the broth.

煮制8分鐘,即可出鍋。

Simmer for 8 minutes.
